winemaking record The grapes are hand picked and sorted 3 times before entering our inox basket-press. The separated juice is then settled overnight with no enzyme additions. 16 hours later the clear juice is gravitated to 2nd and 3rd fill 300 L French oak barrels. The juice then undergoes a 16 day natural fermentation at 15ºC. The barrels are stirred twice weekly for the first 2 months. Thus creating the rich , creamy flavours experienced on the mid-palate.
maturation prior to release 4 months in 300 litre French oak barrels and 2 months in 750ml bottles.

winemakers comments Light straw colour. Powerful Mineola, apricot blossom and peach flavours which mingle with hints of vanilla and lime blossom on the nose. The palate supports the nose by following on the intense fruit flavours. Crisp acidity and freshness suggest a wine which will age well or could be enjoyed now.
